“I was born into a family in a small town in Sicily, with ancient culinary traditions, where everything was produced at home.

My passion for food began as a child. I remember telling my mom not to prepare dinner because I wanted to be the one to cook it for myself.

Studies have led me in a different direction, but my passion for cooking was stronger.

My most significant experience was with Giuseppe Carrozza. With him I discovered a whole new world.

I have a strong bond with the kitchen, with the products and with Italian places, from which I draw inspiration to create and rework my traditional dishes aimed at innovation.

My kitchen is based on essentiality, substance, lightness.

Seasonal ingredients and innovative techniques create a perfect combination of tradition and innovation. “
